Fall is finally here and pumpkin spice is on all of our minds, whether you love it or hate it. At Envy we love it. Cannabis Pumpkin Spice Coffee Cake is the best dessert recipe going into fall. This coffee cake pairs amazingly well with your morning coffee or tea or as a snack before bed. A pumpkin spiced coffee cake is also the perfect dessert for Thanksgiving dinner. But make sure you are careful with dose if you’re going to make more than one cannabis-infused recipe this thanksgiving.

And note that you can always mix the THC and CBD coconut oils to tone down the dose as well as mix with regular coconut oil butter, or olive oil depending on the product you are using. Always use responsibly.

INGREDIENTS

Cannabis Pumpkin Spice Coffee Cake recipe makes approximately 9 squares (depending on the size you cut them). Make sure you are aware of the dose when cutting appropriate portions.

Crumble:

1/2 cup  light brown sugar
1/4 cup all-purpose flour
1/2 cup finely chopped pecans
1 teaspoon ground cinnamon
3 tablespoons unsalted butter, melted

Cake:

2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon fine salt
1/4 teaspoon ground ginger
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/2 cup light brown sugar
1/2 cup granulated sugar
1 cup pumpkin puree
4 ounces sour cream, at room temperature
2 large eggs, beaten
1/2 cup (120ml) olive oil total mixed with Miss Envy’s THC olive oil depending on dose (30ml THC olive oil with 90ml regular olive oil will make 9 – 11mg THC squares approximately)

If you’re thinking this cannabis pumpkin spice coffee cake is already sounding very sweet (like I do) feel free to leave off the glaze icing and it will be just as tasty.

Note: If you would prefer to make this recipe with CBD rather than THC simply switch the oil for Miss Envy’s coconut oil. Follow the same steps as with the oil to get the best dose (1/2 cup of CBD oil would make 9 – 27.7mg CBD squares).

For the glaze

1/2 cup powdered sugar, sifted
2 tablespoons maple syrup

INSTRUCTIONS for Cannabis Pumpkin Spice Cake

  1. Preheat the oven to 350°F. Spray the bottom of an 8-inch square pan with nonstick cooking spray.

Make the crumble

  1. In a small bowl, combine all of the streusel ingredients with a fork until crumbly.

Make the cake

  1. In a large bowl, stir together the flour, baking powder, baking soda, salt, cinnamon, ginger, nutmeg, brown sugar, and granulated sugar.
  2. In a small bowl, stir together the pumpkin puree, oil, sour cream, and eggs. Make a well in the center of the dry ingredients, then pour in the wet ingredients. Gently stir until just combined.
  3. Spoon half of the batter into the prepared pan. Sprinkle with half of the crumble. Spread the remaining batter over the crumble. Sprinkle with the remaining crumble.
  4. Bake for 35 minutes, or until a toothpick inserted in the center comes out clean. (note: Glass and ceramic pans will take longer to bake than metal.)
  5. Cool for 15 minutes.

Make the glaze

  1. In a small bowl combine the sugar and maple syrup until a thick, pourable icing forms. Drizzle over the warm cake.

Enjoy!

  1. Cut into squares and serve.
  2. Store leftovers, covered, at room temperature for up to 4 days. But I doubt it will last four days!
