Healthy Cookie Dough Recipe with Chickpeas and CBD
The following recipe is by Michelle Garland, a nutritionist from Plentyfullme. Who doesn’t want to eat the cookie dough before it’s cooked? With Michelle’s healthy cookie dough recipe, you can! It’s vegan, dairy-free, refined sugar-free, loaded with fibre + plant-protein, and is pretty damn close to the real thing. Forget the spoonful, TAKE A BOWL! Add CBD and it’s the perfect movie night snack
Makes 2 cups
1 can chickpeas, peeled and rinsed very well*
1/4 cup cashew butter (almond/peanut butter also works)
3 tbsp oats
1 dropper full Miss Envy CBD oil (if you’re considering switching to THC make sure to pay attention to the dose and use responsibly)
2 1/2 tbsp maple syrup
2 tsp vanilla extract
Pinch of sea salt
¼ cup dairy-free chocolate chips
- Add all ingredients, except for the chocolate chips, to a food processor or high-speed blender. Process until a thick, even dough forms, scraping the sides as necessary.
- Taste the dough and add more sweetener, if desired.
- Transfer the dough into a large bowl and use a spatula to fold in chocolate chips.
- Serve and enjoy!
*If cooking your own chickpeas from dry use 1 1/2 cup.
*Leftovers will keep in the fridge for up to one week. But let’s be real most of us are going to eat this amazing healthy cookie dough in one sitting.
