Vegan Fluffy Crispy Waffles

What morning isn’t made better with waffles? Try these vegan fluffy crispy waffles from Michelle at Plentyfullme. Make them extra special with Miss Envy’s THC or CBD coconut oil, or drizzle them with melted cannabis chocolate, nothing is better than cannabis chocolate (yes, there are CBD only chocolate options).

INGREDIENTS

1 1/2 cup nut milk
1 tsp vanilla
2 tbsp apple cider vinegar
2 cups all-purpose flour
1 tbsp baking powder
1/2 tsp sea salt
2 tbsp coconut sugar
1/4 cup Miss Envy coconut oil, melted

Note: make sure to pay attention to dosage, particularly when using THC products. Please use repsonsibly.

INSTRUCTIONS

  1. Mix the nut milk, vanilla and apple cider vinegar in a small measuring cup + set aside for 5 minutes. This will make the vegan buttermilk.
  2. In a large bowl, sift the flour, baking powder, and sea salt. Make sure to sift! This helps with the fluffiness.
  3. Add the coconut sugar, melted coconut oil, and buttermilk mixture into the dry ingredients and use a spatula to gently mix the batter until just combined. If there are still lumps in the batter, that’s okay! The batter should be thick and scoopable.
  4. Preheat + grease your waffle maker with coconut oil. Add 1 cup batter and pour/spread into the middle. You don’t need to push it to the edges. Close and let cook until it stops steaming – about 3 minutes.
